You will be surprised ! Blood Sugar Friendly Recipes

Dieting can be so tricky ! While you’re keeping your carbs and sugar in check, some Paleo recipes can still cause your blood sugar to spike. Some people eat more sugar to stop that awful lightheaded, crazy feeling ! You need to keep this in mind, especially if you have any medical conditions that may cause chaos because of this. I learned about a few tempting food choices that will definitely satisfy your cravings and keep your appetite in check. I found a blog called Paleohacks.com that I have to give the credit to, and definitely wanted to share some of the recipes they provided. Some of them look marvelous:

Skip the sugar ! Eat these instead ! Knew I’d getcha !

Keto PB & J cups-filled with raspberries and creamy almond butter:

**What you’ll need- Small saucepan, small jar, double boiler, standard muffin tin, muffin liners**

Ingredients:

3 Tablespoon water

1/3 cup fresh raspberries

1 teaspoon Stevia

1/2 teaspoon grass-fed gelatin (I’m assuming regular would be ok )

1/2 cup coconut oil

1/2 cup creamy almond butter

Instructions:

**In saucepan over low heat, combine water and raspberries. Bring to boil, reduce heat and simmer 5 minutes. Mash raspberries with fork and remove from heat.

**Stir in stevia and slowly sprinkle in gelatin as you star. Pour into small jar and cool in refrigerator for 30 minutes.

**Melt coconut oil and almond butter in a double boiler. Stir until smooth.

**Line 6 muffin tins with liners and pour 2 tablespoons of almond butter mixture in each muffin tin. Place in freezer 15 minutes to set.

**Add a heaping teaspoon of jam to each tin followed by remaining almond mixture on top. Place in freezer 15 minus before eating. After store in the refrigerator. A healthy guilt-free treat.

A quick easy snack to balance blood sugar

Keto Avocado Stuffed Chicken Meatballs:

Ingredients:

1 lb. ground chicken ( they suggest pasture raised )

1 tablespoon Dijon mustard

1/4 teaspoon garlic powder

2 tablespoons parsley

1/2 teaspoon sea salt

1 ripe avocado mashed until smooth

1 tablespoon ghee

Instructions:

**In a large mixing bowl, combine chicken, dijon mustard, garlic powder, parsley and sea salt. Mix till combined.

**Form the mixture into 10 golf ball size meatballs, reserving about a half a cup of meat. Create a divot in the center of each meatball and fill with 1/2 teaspoon of mashed avocado. Cover divot with 1 teaspoon of the reserved ground chicken to seal.

**Heat ghee over medium heat in skillet. Add 4-5 meatballs and cook 12 minutes turning them to evenly brown on all sides. Set aside and keep warm.

**Repeat with remaining meatballs and serve.

For those craving Sushi but want low carbs

Spicy Tuna and cucumber bites:

Ingredients:

1/2 lb. tuna ( sushi grade ) finely diced

1 cucumber cut into thin rounds

1 green onion finely sliced

1 avocado diced into small cubes

2 tablespoons coconut aminos

2 teaspoons sriracha sauce

1 teaspoon sesame seeds ( optional )

Sea salt and freshly ground black pepper

Instructions:

**In a bowl, toss the tuna, *coconut aminos, sriracha, and season with salt and pepper to taste

*Coconut aminos: They are a Paleo substitute for soy sauce. They have the same smoky, salty soy sauce flavor !*

**Top each cucumber slice with avocado

**Scoop some tuna mixture onto each cucumber slice on top of avocado

**Sprinkle sesame seeds on top and serve with green onions as garnish

**I like to add a drizzle of low sodium soy sauce ( optional ) or on the side but see info on *Coconut aminos above !

Paleo staples that you might want to have on hand:

  1. Gelatin-a little makes a sauce velvety, a lot will give you pudding or jello. It’s actually good for your joints and gut-healing
  2. Almond or coconut flour- helps with thickening sauces or breading crispy fried chicken
  3. Nutritional yeast-it replaces the cheese in a way and great in recipes
  4. Unsweetened cocoa powder- all the benefits of chocolate without the sugar! Great for homemade treats.
  5. Fish sauce-delivers tangy, fermented taste that makes really good Asian food delicious . Great in stir fries, salad dressing and soup
  6. Dried seaweed-contains important minerals, adds flavor and body to broth, soup, stew, or even sushi
  7. Dried mushrooms-high in amino acid glutamine, and has a meaty flavor
  8. Coconut aminos- Paleo friendly substitute for soy sauce. Has a smoky salty taste.
